As I start out on this new adventure, I would like to share my loves. I love the Lord Jesus Christ, who without, I would be nothing. I love my husband who I met in a far away Peruvian land quite by accident, or so I thought. I love my two boys, Santiago and Luca. My boys are my life and reason for everything. I love making crafts that make my children happy. I love football, the Titans specifically. I get angry when fans leave early, even if we are behind by 40 points, or should I say, when...it's sad. I love food. I also love food. Jamie Oliver and Ree Drummond are two of my heroes, along with the best cook I've ever known, my mother.
As a newlywed I was a horrible cook and couldn't understand how anyone could enjoy cooking. But to be fair, I worked 40 hours a week. I would get home at 5:30 ready to eat right away, so I didn't have time to prepare anything except frozen whatever blah. Now I am a stay at home mom and have the time to meal plan and enjoy cooking. I can cut vegetables during nap time or while my older son is at preschool.
Now that I know some of the basic cooking methods and tricks I feel like I can step out of my shell and enjoy cooking. Mexican food is my all time favorite, so is Peruvian food, as well as baking bread, any kind really, oh and I love cookies and anything chocolate. I add extra garlic and cilantro to everything, it's really hard to have too much cilantro!
I am finally getting to the point where I change up recipes. I see something that looks really yummy, but I dont have this ingredient or I think something else would taste a little better. Im not really to the point of making my own recipes yet, but I do like to tweek others.
Of course as Im writing this Im making dinner, not using a recipe. So maybe I can make up a few things! I was given some left over brisket on Sunday. And by some, I mean a lot! Brisket CAN NOT go to waste! It's almost a sin! Two nights ago we had brisket sandwiches, really good! Last night we had brisket nachos, so good! Tonight we are having the last little bits of brisket in soup, hopefully amazing! I had some chicken stock from a whole chicken I had made a few weeks ago, threw in any and every veggie I could find, plus the brisket, and of course some left over cilantro. Ahh! Have I mentioned I LOVE food!?
